No iftar is complete without the sweet and tangy imli ki chutney!! It is the bestest possiblest accompaniment for almost anything on our traditional iftar table.. Its amazing how a coouple of ingredients combine together to create this heavely creation.

I remember the early days of my sneaking around naptime with some computer microsoft games in the 90s. Remeber those prince of persia sort of animation things 😀 :D. And in my need for looking for a snack I would stumble upon the bowl of this chilled chutney in the fridge and i would just pour some into a bowl and find some stuff to dip in it or have on its own!!! And I would relish the play of sweet and tangy in my mouth and i would wonder how difficult it must be to create stuff this amazing!!! And marvel at my mom for being such a magician with her cooking skills!!!!
I was not the only one who was hooked to this incredibly gorgoeous thing!! My dad refused to have his meals without it on several occasions at OTHER PPLS place and demanded the said chutney so much so that the females of the family would chase mom around for the popular recipe that had almost everybody hooked to it!
It was not only my first ramadan after being married that i suddenly realized I dont have it and i need to make some asap!!!!! I was shocked to discover the simplicity of the recipe and was actually kind of skeptical that it would work!
Well I tried! First i dipped my spoon in it and taste… BAM I was hit smack in the face with alllllll those childhood memories associated with it!!! I was right there tasting that very same thing savouring the very same flavours!!! I nailed the recipe to perfection in a snap!!!!!!! IT was a snap to make!!
Here is the coveted recipe i am sharing with you all
and I am warning you it gets veeeeeerrrrry addictive!!!!!
tamarind 1 packet
water 4 cups
sugar 1-1.5 cups
red chilie powder 1 tsp
- Soak the tamarid in water for two hours or whole night.
- Pour the tamarind water through a seive and take out all the seeds. mesh to squeeze the pulp out of the seive.
- Place the saucepan on a medium heat and add sugar and red chilies powder.
- let this mixture simmer on low heat for about 20 to 40 mins. Depending on the consistency you need.
- For a thinner spicier version: Add green chilies paste and 1/2 tsp of crushed red chilies. And cook only for about 20 mins.
- For a thicker more syrupy version: Add 1/2 cup sugar and simmer for an hour!
And there you have it! The easiest simplest most gorgeous no fuss tamarind recipe ever!!!
They are both a staple in my house around ramadan. I not only use it as a dip for pakoras and samosas its also amaaaazing on top of paapri chaat and fuit chaats of all sorts!
