mothers day picnic 6Mothers are such humble easy to please souls. I am not a huge fan of fancy gift shopping. I am more of a time and effort investment person. So instead of running around the block for the perfect pair of rose gold ear rings or those pricey gadgets or rose ceramics I chose to spend time with her in a nice old fashioned picnic!!!

I cannot count how fun it was to sit back on the easy grass again and enjoy the simple delights of life! 🙂 🙂 of course we had flowers and of course we packed some yum snacks. But the mere presence in nature had this amazing spring breezy vibe to it. Which made it sooooo much more remarkable!

Planning a perfect picnic is not stressful at all. you just need to know what you need. Here is my recipe for a perfect mothers day picnic:

  1. Flowers: yes ofcourse you will be surrounded with nature but there is something so sweet and so feminine about a fresh bouquet to have on hand and to give it to your mom that is sure to bring smiles to her face. Esp if you make the little ones present it to her! sure to melt her heart 🙂

2. Pretty napkins and blanket: Yes a jute mat will do. Its not like we wont have any place to sit. But to have a nice bright spring arrangement is just too pretty to ignore. Plus it adds the special going out of your way to please mom effect to the whole picnic which is what we want right.

3. Fresh Fruits: no picnic is comeplete without some grapes and a handful of strawberries to munch on. And it is definitely not an exception for a mothers day treat. Make sure to pack some zesty fruits to entice your taste buds

4. Guacamole and good whole wheat bread: I am a sucker for good bread. I looooooove bread in every form and this paired with some too easy to whip up guacamole is just amazing. Its a truly humble but soaring taste buds recipe!

5. Sandwiches:  one of the best picnic food. Easy to assemble easy to carry and filling. so ofcourse v had sandwiches for lunch. I chose the simple egg sandwich with some hot sauce for heat. Tip: use your moms secret ingredient to upgrade them. Mine was ofcourse heat. and she loved it!!!

Chocolate cake: Who can resist a good chunky chocolate cake. Esp with soft whipeed cream and strawberroes and chocolate ganache

6. Pack proper cutlery: This adds refinement which a mother always appreciates in a daughter!

Purple cabbage coleslaw

Today’s recipe is a simple but ooooo soo pretty and sooooo goooood coleslaw.

For a last minute lunch preparation I was running short of ideas. Rushing down the grocery isles I caught a glimpse of a purple beauty! I bought it on impulse. Came home caught sight of pineapples and cucumbers. hmmm that could work!!!

In it all went the chopper. Alongwith some walnuts and raisins. I held on to some of them to top on the salad later.

A couple of whizzes a dash of salt, some sugar, some black pepper and mayonnaise. And voila!!

the sweet and tangy crunchy coleslaw was the perfect ooomph for the hastily put together lunch!!!

Purple cabbage coleslaw

Ingredients

Purple cabbage                             abt 1 cup

cucumbers                                             1

pineapple slices canned                    3-4

raisins                                                    6-7

walnuts                                                  6-7

Dressing

Mayonnaise                                            1/4 cup

salt                                                             1/4 tsp

black pepper                                            1/4 tsp

sugar                                                            1 tsp

Method

  1. In a chopper add the cabbage cucumbers and pineapple slices. Some walnuts and raisins as well. Reserve a few for topping.
  2. Whiz till its chopped down to the desired level.
  3. Take it in a bowl, and directly add the mayonnaise salt pepper and sugar to the salad.
  4. Toss and adjust according to taste
  5. Enjoy!

I prefer it chilled. Its fantastic after a couple of hours in the fridge. The flavors marry each other beautifully. And its very refreshing.  But its really sweet and crunchy as it is as well!!

 

Healthy snacks: Apple and peanut butter

If you think banana and peanut butter are match made in heaven than think again!!! We have a new mind blowing combo!!(not that peanut butter needs any :D) APPLES AND PEANUT BUTTER!!!!!!

Totally fresh healthy easy to make and filling!

Its as simple as that, take out hte core of the apple with one of those core things. Cut apple in slices.

Top with peanut butter.

Sprinkle with coconut and crushed almonds!

Eat and love!!

What every parent should do on a Friday morning or a Saturday or a Sunday morning???

Bake Chocolate cupcakes with kids!!! and than take them on the other level with chocolate ganache!!! and than make kids fall in love with them(if they aren’t ecstatic already!!) even more with some tossed crushed (or whole) mnms on them… 🙂 Best and yummiest PJ activity!! Now does that image not bring a smile to your face or what?!

My daughter wakes up every Friday morning before us! Well us being super lazy after a night out and dizzy after the week. But kids hardly know that. She wakes up bursting with energy as usual and is eager to jump right ahead on the weekend! which is not possible always. She bursts into our room in her PJs (well sometimes she gets dressed by herself too before bursting in!) and demands cereal and movie or her ipad! considering we are still asleep! Most often we succumb and she is set up for an hour or two, but then what! she is bored and up to mischief.. and our groggy noises aren’t doing any good 🙂

So? solution: Friday morning is the cooking time in our family.

We bake, we whisk we laugh, we crack eggs, we scoop, we measure, sometimes spill (uh-oh), and kids love that!! There are plenty of easy recipes out there which are kid friendly but require parental guidance ofcourse! I tend to make my own. One of the best options is always to make cupcakes!!! and its also the first one she demands to do.

So this time we are doing CHOCOLATE CUPCAKES WITH CHOCOLATE GANACHE AND MnMs

She is responsible for : whisking, measuring, cracking eggs, pouring, smashing mnms and eating. 🙂

CHOCOLATE CUPCAKES WITH CHOCOLATE GANACHE AND MnMs

Recipe:

Ingredients:

Flour                               2 cups

Oil                                    1 cup

Eggs                                 3

milk                                 1 cup

cocoa powder                1/2 cup

baking soda                   1 tsp

baking powder              1 tsp

sugar                               1 1/4 cup

Method:

1. Turn on the oven at about 250 C. Line a muffin tray with cupcake liners and brush with oil lightly. Set aside.

2. In a bowl combine all the wet ingredients, and whisk well.

3. Combine all the dry ingredients.

4. slowly add the dry ingredients one cup at a time while whisking into the wet ingredients. Continue till the batter is thoroughly mixed.

5. Pour it into the cupcake tray and bake for about 20 mins or till a toothpick inserted comes out clean.

Chocolate gananche

Ingredients:

Chocolate bar              40 gm(your fav bar)

butter                             1 tbsp

milk                               2 tsp

Method:

1. melt the chocolate in a bowl set in boiling water. add butter and milk and whisk. Add more butter to add gloss and more milk for better consistency and thinning.

And there you go! beautiful silky ganache ready to be licked and dipped 🙂

To Decorate:

Take each cupcake and submerge the top in the ganache. Rotate it a bit and take it out!!
