My favorite go to egg less breakfast!!!

Its fast! is ready in minutes! insanely satisfying and healthy and delicious!!! What more can you ask for when you are running around after three kids

I Loooooooove Halloumi!!! Its absolutely amazing!! and Grilled Halloumi is just sth from above!!

I am a huge egg fan as well. But everyday with the same old sunny side up breakfast become tad bit boring. So to spin things a bit I turn to this recipe every now and than!

So to speak its a simple sandwich! open faced as been pictured! But the variations and tweaks you can make to it are incredible. And the slightest tweak takes it a level above.

A couple of twigs of fresh mint adds great depths of flavors. Toss a pinch of red paprika for heat on top if you prefer. layer the base of the sandwich with a mashed avocado, or you can omit the toast altogether and make it a lettuce wrap or a tortilla wrap! But the most effective elixir I find in uplifting this sandwich is the herb infused olive oil 🙂 🙂

I don’t feel the need to add much seasoning coz Halloumi is very salty itself. I do add a pinch of salt to the grilled tomato whilst its still in the pan. Other than that it requires nothing more nothing less. Is absolute perfection.

Ingredients

Halloumi cheese                                  300 gms

tomato sliced                                           4-5 slices

mint sprigs                                                3-4

bread                                                               2

herb infused olive oil

salt (optional)

Method

  1. Drizzle olive oil in a pan and grill the halloumi slices. Take them off the heat once its bronzed on either side.
  2. Grill tomato slices and sprinkle bit of salt on top.
  3. Toast/ bake heat up the toasts as desired. Layer with tomatoes, top with Halloumi and fresh mint.
  4. Drizzle some more olive oil on top for extra flavor!!
  5. Enjoy!!!

Healthy Date Balls Platter

Well we have reached the end of ramadan!!

By this time we have fallen into our jumbled up routines.. Sleep backlogs and Iftar dinners are all catching up alongwith eid shopping and last ashra nights..  (fuuun!!!!)

But don’t get me wrong!!

I absolutely love making iftars and preparing for iftar and the iftar parties… the anticipation of food and our taste buds that dwelled on pakoras and samosa chaats on growing up just keep pushing for the same

Dates are an essential Iftar feature world over!! They are packed with energy and are the perfect first thing to eat that is sweet and nutritious and gives an energy boost without overwhelming the taste buds or intestines!!

It is a scientific fact that they  regulate the digestive process and can significantly boost energy levels in people within half an hour of consuming it. Other than being a good source of various vitamins and minerals they are packed with energy, sugar and fiber. along with several essential minerals such as calcium, iron, and zinc.

With all the Iftars lined up and the hectic schedule of suhoor and babies and life.. So to make things easier and healthier One of the things I love to add to my Iftar table is to create this big date platter! I love to upgrade my dates with this easy additional toppings which makes a total Iftar statement and is delicious as it is good to look at!!

My date platter consists of dates filled with nuts! I prefer almonds or walnuts! You can experiment with your favorite kind like cashew nuts or pistachios which in my opinion would work well!!

My favorite element to add are the whipped cream filled dates!!!! They are A.M.A.Z.I.N.G!!!!! If you have never had them before you have got to give them a try!!!! Simply whip u pcream and add vanilla essence and sugar to taste!(obviously this needs to be done when you are not fasting) And fill up the dates with the whipped cream! And sprinkle some freshly shredded coconut on top!! Heavenly delightful!!!

The third element that I add to my date Iftar centerpiece are the good ol’ date balls!! I have a really sweet tender spot for the energy bars and the healthy snack items that consist of dates! In my routine life I always rely on dates as a snack option and the healthy energy bite sized balls are top of the list! You can use your favorite recipe or any that you find intriguing and easy!

Mine is a super simple combo of date paste+nuts+graham crackers+shredded coconut! Simply mix up these ingredients to taste!! I don’t even use blender!!! Just pop them all in and use a wooden spoon to mash up everything!( ofcourse nuts would require previous chopping!!) When you are happy with the mixture! Just roll them into bite sized balls! Or the way I like it table tennis ball sized date balls!!

I always have the date mixture on hand to be replenished after every Iftar!! And my faily loves to nibble it all down slowly over the last ashra till its all gone by the end of Ramadan!! 🙂

They are healthy and fun and like any effective centerpiece a great conversational starter!! The perfect way to treat your guests to a fantastic Iftar!! And they make iftar a breeze! Well in style!! 😉

Almond filled dates

Dates (the amount your choice of centerpiece requires)    30

almonds (choice of nuts)                                                               30

Method:

  1. Slit the dates from the center and pit it out.
  2. Place the almond instead and place in the centerpiece around the edge.

Sweet Cream filled dates

Ingredients:

Dates (the amount your choice of centerpiece requires)    20

cream                                                                                                   1/4 cup

sugar                                                                                                     1 tablespoon (or to taste)

vanilla essence                                                                                   2-3 drops

shredded coconut                                                                             2 Tablespoon

Method: 

  1. Pit the dates.
  2. Whip up the cream.
  3. Add sugar and vanilla essence. And mix.
  4. Using a spoon fill the open dates with the cream.
  5. Top with shredded coconut.

 

Date Balls

Ingredients:

Dates/Date paste                                                                              1 cup

shredded nuts                                                                                   1/2 cup

shredded coconut                                                                             1/2 cup

graham crackers                                                                               1 packet (abt 10 pieces)

Method:

  1. Pit and puree the dates (If required).
  2. Add in the shredded nuts,shredded coconut, mashed graham crackers.
  3. Use a wooden spoon to bring it all together.
  4. Make golf ball sized balls of the mixture.
  5. Roll the balls in a plate of shredded coconut for garnish.
  6. Enjoy!

Always keep the spare mixture on hand for replenishing your platter till it stays with you till the end of the Holy month!

Watermelon and feta salad

Nothing speaks summers better than a sweet juicy chilled watermelon!! And the bestest and freshest of ingredients together in this summer salad for a very refreshing boost. What gets better than fresh mint an cucumbers combined with juicy watermelon chunks and topped with salty gooey feta cheese!!

Whats more its as easy to whip up as its easy to wash down. Just chop all the ingredients set it in plate and let it chill! that is it!!!

The juicy sweetness of the watermelon and the salty creaminess of the feta kicks the need of adding any dressing!  In my opinion its complete and whole and delicious on its own!!

An absolute amazing accompaniment to a picnic or a day out at the beach! And its a sure hit with kids and grown up s alike!!

Ingredients

watermelon                        1 cup cubed

cucmber                               1 peeled and cubed

mint                                        handful

feta cheese                            1/2 cup cubed

Method

  1. Chop all the ingredients to your liking and toss them all together!!!!!!!!!!

nothing more to it!!!

Its the perfect magic you can play with mixing the right ingredients together!

Mothers day recipe: guacamole

For the mothers day that went past couple of days ago we went for a simple picnic posted here! complete with fresh flowers and naked chocolate cake with strawberries and whipped cream and ofcourse our fav bread accompaniment GUACAMOLE!!!

I love guacamole for the simplicity of the recipe and the healthy amount it adds to our meals! my mom is not very keen on guacamole! she finds the avocado bit bland.. So this time I kicked it up a bit with a generous amount of crushed chillie flakes! and oh boy was it good!!! it was unbelieveable!!

Ofcourse the base of this guacamole is good ripe avocado (or two if you prefer) and the rest of the ingredients are pretty basic too. Just some salt, lemon juice and corriander! The one additional tip that I will give to my fellow guacamole loving people is: to mix the salt with the lemon juice. That way you will distribute the salt evenly and not in the chunks of it!

Ingredients:

ripe avocado                                            1

salt                                                             to taste

lemon                                                         1

corriander                                                1/4 of a bunch

and for the heat of course

red chilies flakes

Method:

  1. Peel and core the avocado and roughly mash it with a spoon into some chunks.
  2. squeeze lemon juice in a cup and mix in the salt.
  3. Chop the corriander leaves and add them to the mashed avocados as well.
  4. Pour over the salted lemon juice.
  5. Sprinkle with a generous dash of red chillie flakes and give it all a good stir.
  6. Scoop it with some nachos or with a piece of bread.
  7. And Enjoy!!
