There is nothing in winters than a big pot full of bubbly creamy sweet chai latte simmering with cardamoms and smelling diviiiiiine!!!!!

I have many a fond memories associated with the sweet milk teas on cold winter nights with cracking peanuts!!!!

There is just sometihing sooooo waaarrrm and cooozy about it

The whole idea just fills you up with warmth!!!

There are homes which are constatnly simmering these concoctions by the minute!!

After a long day nothing beats wrapping your fingers around the hot mug of steamy chai latte and chattering with your loved ones while cuddling in blankets…

Can I say it brings people together 😀 😀

And makes the world a better place?!?!?!?!? 😀

I don’t know about the rest of you but it makes MYYY world a better place!!!

There are several ways of doing it. There is no particular right or wrong it’s all about preference. As far as I know evvvvveryone has their own version of it. Their own pressure point which they want to meet in each and every cup! And once they create the perfect cup! It makes their day bright and everything easy-ier!!!

Here is what you need to do to make a big pot! Yes I  say pot!!Coz it should be something like bigger like not just for the individual but for the friend dropping by or your spouse coming home after a long day!! Or maybe you need two instead of one!! Like all warmth inducing things we want them BIIIIG and plenty!!!! And to be able to share!!

You can certainly cut it down! With one tea bag one cup of water and milk about 1/2 cup!!

Okay back to the recipe

I use brown sugar for absolutely no particular reason. Plain white sugar would be just as fine! Milk should be full fat. There are skimmed milk version as well. But the traditional recipe calls for good quality full fat creamy milk, and I recommend not replacing it! My favourite ingredient has to be the cardamom pods!! The aroma is just overwhelming!! I love it!!! Some prefer to skip it! (I fail to see Y) and you most certainly can! But I would definintely recommend it always!!

Ingredients

3 cups milk

3 black tea bags of your choice

2 tbs brown sugar

2 cardamom pods

3 cups water

Method

Step 1: Bring water to a boil.

Step 2: Add cardamom pods and tea bags adn let it simmer for a minute or two. You can add the sugar here as well. Or if not you can add it to your personal mug later.

Step 3: Pour milk. Bring the pot to a boil and than turn the heat down to a simmer.

Step 4: Pour it in mugs and serve with your favourite biscuits or cake!

An omelet can be a humble breakfast or it can be feast fit for royalty!! It can be dressed up or dressed down.. and is wonderful both ways. I think its a staple in every home like the big black tee you have to pull out on all occasions.

I enjoy my omelet in many ways but recently  i think I have discovered its soul mate. 😀

On a whim I looked into my fridge one fine morning for something to add to my omelette. And caught a glimpse of leftover butter chicken with its thick creamy gravy .. hmmmm

I was in the mood of adventure and my taste buds demanded bit of heat

I took that out along with some green chilies and coriander..

but was not exxxxxactly in the moood for a toast here

instead I pulled out the packet of frozen paratha or a tart dough and baked it in the oven till it was crisp and golden,

Ever since then I always make sure I save some of the butter chicken evvvery time I make some! And on ever such day I am always looking forward to my breakfast!!!!

My favorite go to egg less breakfast!!!

Its fast! is ready in minutes! insanely satisfying and healthy and delicious!!! What more can you ask for when you are running around after three kids

I Loooooooove Halloumi!!! Its absolutely amazing!! and Grilled Halloumi is just sth from above!!

I am a huge egg fan as well. But everyday with the same old sunny side up breakfast become tad bit boring. So to spin things a bit I turn to this recipe every now and than!

So to speak its a simple sandwich! open faced as been pictured! But the variations and tweaks you can make to it are incredible. And the slightest tweak takes it a level above.

A couple of twigs of fresh mint adds great depths of flavors. Toss a pinch of red paprika for heat on top if you prefer. layer the base of the sandwich with a mashed avocado, or you can omit the toast altogether and make it a lettuce wrap or a tortilla wrap! But the most effective elixir I find in uplifting this sandwich is the herb infused olive oil 🙂 🙂

I don’t feel the need to add much seasoning coz Halloumi is very salty itself. I do add a pinch of salt to the grilled tomato whilst its still in the pan. Other than that it requires nothing more nothing less. Is absolute perfection.

Ingredients

Halloumi cheese                                  300 gms

tomato sliced                                           4-5 slices

mint sprigs                                                3-4

bread                                                               2

herb infused olive oil

salt (optional)

Method

  1. Drizzle olive oil in a pan and grill the halloumi slices. Take them off the heat once its bronzed on either side.
  2. Grill tomato slices and sprinkle bit of salt on top.
  3. Toast/ bake heat up the toasts as desired. Layer with tomatoes, top with Halloumi and fresh mint.
  4. Drizzle some more olive oil on top for extra flavor!!
  5. Enjoy!!!

Healthy Date Balls Platter

Well we have reached the end of ramadan!!

By this time we have fallen into our jumbled up routines.. Sleep backlogs and Iftar dinners are all catching up alongwith eid shopping and last ashra nights..  (fuuun!!!!)

But don’t get me wrong!!

I absolutely love making iftars and preparing for iftar and the iftar parties… the anticipation of food and our taste buds that dwelled on pakoras and samosa chaats on growing up just keep pushing for the same

Dates are an essential Iftar feature world over!! They are packed with energy and are the perfect first thing to eat that is sweet and nutritious and gives an energy boost without overwhelming the taste buds or intestines!!

It is a scientific fact that they  regulate the digestive process and can significantly boost energy levels in people within half an hour of consuming it. Other than being a good source of various vitamins and minerals they are packed with energy, sugar and fiber. along with several essential minerals such as calcium, iron, and zinc.

With all the Iftars lined up and the hectic schedule of suhoor and babies and life.. So to make things easier and healthier One of the things I love to add to my Iftar table is to create this big date platter! I love to upgrade my dates with this easy additional toppings which makes a total Iftar statement and is delicious as it is good to look at!!

My date platter consists of dates filled with nuts! I prefer almonds or walnuts! You can experiment with your favorite kind like cashew nuts or pistachios which in my opinion would work well!!

My favorite element to add are the whipped cream filled dates!!!! They are A.M.A.Z.I.N.G!!!!! If you have never had them before you have got to give them a try!!!! Simply whip u pcream and add vanilla essence and sugar to taste!(obviously this needs to be done when you are not fasting) And fill up the dates with the whipped cream! And sprinkle some freshly shredded coconut on top!! Heavenly delightful!!!

The third element that I add to my date Iftar centerpiece are the good ol’ date balls!! I have a really sweet tender spot for the energy bars and the healthy snack items that consist of dates! In my routine life I always rely on dates as a snack option and the healthy energy bite sized balls are top of the list! You can use your favorite recipe or any that you find intriguing and easy!

Mine is a super simple combo of date paste+nuts+graham crackers+shredded coconut! Simply mix up these ingredients to taste!! I don’t even use blender!!! Just pop them all in and use a wooden spoon to mash up everything!( ofcourse nuts would require previous chopping!!) When you are happy with the mixture! Just roll them into bite sized balls! Or the way I like it table tennis ball sized date balls!!

I always have the date mixture on hand to be replenished after every Iftar!! And my faily loves to nibble it all down slowly over the last ashra till its all gone by the end of Ramadan!! 🙂

They are healthy and fun and like any effective centerpiece a great conversational starter!! The perfect way to treat your guests to a fantastic Iftar!! And they make iftar a breeze! Well in style!! 😉

Almond filled dates

Dates (the amount your choice of centerpiece requires)    30

almonds (choice of nuts)                                                               30

Method:

  1. Slit the dates from the center and pit it out.
  2. Place the almond instead and place in the centerpiece around the edge.

Sweet Cream filled dates

Ingredients:

Dates (the amount your choice of centerpiece requires)    20

cream                                                                                                   1/4 cup

sugar                                                                                                     1 tablespoon (or to taste)

vanilla essence                                                                                   2-3 drops

shredded coconut                                                                             2 Tablespoon

Method: 

  1. Pit the dates.
  2. Whip up the cream.
  3. Add sugar and vanilla essence. And mix.
  4. Using a spoon fill the open dates with the cream.
  5. Top with shredded coconut.

 

Date Balls

Ingredients:

Dates/Date paste                                                                              1 cup

shredded nuts                                                                                   1/2 cup

shredded coconut                                                                             1/2 cup

graham crackers                                                                               1 packet (abt 10 pieces)

Method:

  1. Pit and puree the dates (If required).
  2. Add in the shredded nuts,shredded coconut, mashed graham crackers.
  3. Use a wooden spoon to bring it all together.
  4. Make golf ball sized balls of the mixture.
  5. Roll the balls in a plate of shredded coconut for garnish.
  6. Enjoy!

Always keep the spare mixture on hand for replenishing your platter till it stays with you till the end of the Holy month!
